Arugula Salad with Toasted Nuts + Feta + Pom Vin

Ingredients

  • Vinaigrette:
  • 1 small shallot, halved and thinly sliced
  • 1 1/2 teaspoons pomegranate molasses
  • 1 tablespoons sherry or apple cider vinegar
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 2-3 Tablespoons extra virgin olive oil

  • For the salad:
  • 4 cups arugula/baby greens/spinach, rinsed and torn into bite sized pieces
  • 1 ripe pears, cored and cut into 1/2" cubes
  • 3 Tablespoons feta, crumbled
  • 2 Tablespoons pecans or pistachios, toasted and coarsely chopped
