Salad Pizza


So I've been getting reminders from my Lettuce Grow that it's time to harvest and reorder, but because all my plants got big all at once, I'm a little behind in my gardening duties. This week I thought I'd make a dent in some baby greens and arugula that had bolted (flowered) but eating a salad sounded like a lot of work so I thought...throw them on a pizza!

And then I spent a really long time trying to decide what to call it. JK. I spent less than 5 seconds thinking of a name and the more I thought about it, the more and more "salad pizza" stuck. To the point and accurate even if it sounds dumb.

Anyway, if you're in the mood for a pizza, but you also want to be healthy but you ain't got time to chew a salad, this is the ticket for you. Get your carb and green fix at the same time. And it's delicious. And it's easy enough that you can make it for lunch in the middle of the day without it being an ordeal.


  • 1 medium sized GOOD pizza crust (I love Essential Baking brand that I get through Imperfect Foods)
  • Olive oil
  • 2 cloves garlic, zested or minced
  • 1-3 strips bacon, cut into 1", cooked
  • 2 cups baby greens/spinach/arugula/kale
  • 1/4 cup Feta
  • 1-2 Tablespoons GOOD balsamic (I got mine from my local farm—it is absolutely delish)


  1. Use the back of a spoon to spread olive oil and grated garlic on your crust (instead of sauce)
  2. Sprinkle on cooked bacon bits
  3. In medium bowl, massage greens with salt and olive oil
  4. Arrange Sala on Pizza
  5. Sprinkle with feta and more bacon bits
  6. Drizzle good balsamic
  7. Bake @425 for 12-15 minutes (or according to your crust instructions)
